Broccoli and Egg on Bread

The recipe is a basic but quick and delicous breakfast. The meal consists of 2 ingredents Broccoli and eggs. I sometimes use the leftover broccoli from the main meal the night before, but the meal also tastes great made from scratch.

Serves 4

Ingredients

  • 2 x heads of broccoli
  • 6 x eggs
  • Sliced Fresh Bread
  • Olive Oil for seasoning and cooking
  • Salt to taste
  • Pepper to taste

Method

  1. Cut the Broccoli in individual flowerets try not to include too much of the base of the floweret.
  2. Add water to Broccoli and then Microwave or Boil the Broccoli until soft
  3. Remove the Broccoli and then season with the salt, pepper and a good dash of olive oil.
  4. Chop the Broccoli into small pieces
  5. Add some oil to a frypan and heat
  6. Add Broccoli and stir thru until hot
  7. Break eggs into pan
  8. Stir until eggs are set
  9. Server on plain fresh bread or even on toasted bread

Notes & Tips

Microwave procees is easy if you have a auto cook vegitable setting as it cooks the Broccoli perfectly. Sometimes it is also good to use the leftover broccoli from the night before you then will need to just make sure the Brocolli is heated through before adding the eggs Try the Recipe with different styles of bread makes interesting combinations.
