Asian-Style Coronation Chicken

This Asian-style coronation chicken is the perfect Monday-night supper as it's ready in a jiffy and tastes amazing. It's great for using up left-over chicken.

Serves 1

Ingredients

  • 1 tbsp vegetable oil
  • ½ Spanish onion, finely chopped
  • 2 tbsp red Thai curry paste
  • Juice of 1 lime
  • 250ml crème fraiche
  • 50g unsweetened desiccated coconut
  • 4 tbsp chopped coriander
  • 2 shredded chicken breasts, poached
  • Toasted bread, to serve

Method

  1. Heat the oil, add the onion and sauté for 1 minute.
  2. Add the Thai curry paste and cook for a further 30 seconds.
  3. Transfer to a bowl, mix with the remaining ingredients and season.
  4. Serve with buttered bread.
