Lychees, cream cheese and nuts make a stylish canape.
113g/ 4oz cream cheese
1 can lychees
1 tbsp rum
Pinch of salt
Pinch of pepper
2 tbsp chopped brazilian nuts
2 tbsp chopped crystalised ginger
4 basil leaves, chopped
Zest and rind of 1 lemon

Drain the lychees.
In a bowl mix the cream cheese with the salt and pepper until the mixture is smooth.
Stir in the other ingredients then stuff the mixture into the lychees with a small spoon.
Serve on a plate garnished with the lemon zest and basil.
