Purple Sprouting Broccoli with Anchovy
Serves 4
Ingredients
- 450g (16oz) purple sprouting broccoli
For the Dressing
- 4 whole garlic cloves, peeled
- 5 tbsp extra virgin olive oil
- pinch dried chilli flakes
- 6 anchovy fillets, chopped
- ½ lemon, juiced
To Serve
Method
For the broccoli
- Steam the broccoli for 5 to 6 minutes or until tender.
For the Dressing
- Heat the oil in a frying pan and add the garlic.
- Fry the garlic until golden then remove and discard.
- Add the chilli flakes and anchovies to the oil and cook until anchovies break down.
- Season and add the lemon juice.
To Serve
- Place the steamed broccoli on a plate and pour over the dressing. Serve with toasted Ciabatta.
