White Cucumber Curry


White Cucumber Curry

This mild curry made of cucumber is an ideal accompaniment to any Sri Lankan dish.

Serves 8

Ingredients

  • 500 Rams peeled Cucumbers
  • 2 teaspoons fenugreek soaked in water
  • 2 large Onions chopped
  • 1 sprig curry leaf
  • 1 piece Cinnamon
  • 2 chefs spoons Coconuts powder
  • 3 green chilli's chopped
  • 2 crushed Cardamom
  • 2 teaspoons Maldive Fish
  • 1 Lime
  • ½ teaspoon Turmeric Powder
  • Salt to taste
  • 500 ml Water

Method

  1. Add all the ingredients except the coconut powder and
  2. lime with 500ml water and cook slowly till the cucumber
  3. is tender.
  4. Add the coconut powder season and add the lime to taste.
  5. Do not boil as it will curdle.
  6. Remove from heat.
  7. It should be thick and rich.
