Ingredients
- 75 g white or brown breadcrumbs
- 50 g Plain Flour
- 100 g brown sugar
- 100 g Vegetable shortening
- 100 g Raisins
- 100 g sultanas
- 25 g Glace Cherries
- 50 g mixed peel
- 1 Lemon rind only
- 1 orange rind only
- 1 teaspoon mixed spice
- ½ teaspoon baking soda
- 1 tablespoon Buttermilk
- 2 organic Eggs
- 1 cup Irish whisky
- ½ metre square of pudding cloth or muslin
Method
- Mix all the dry ingredients
- Add the beaten eggs & butter milk
- Butter a pudding bowl & line with pudding cloth or muslin
- Add the pudding mix, fold over the cloth & tie
- Steam for two hours & allow to cool
- To serve on Christmas day, steam again for one hour
- Turn out the pudding & remove the cloth
- Pour over the Irish Whisky & set alight
- Decorate with fresh holly leaves
- Serve with custard
