Bircher Muesli

A healthy and delicious start to your day, this home made bircher muesli consists of rolled oats, lemon juice, yoghurt, honey, fresh fruit and nuts.

A good friend, Greg Fraser, passed this recipe on to me many years ago, and now my wife Sam makes it for me almost every day.

It is very simple and good for lowering cholesterol levels. You can have any fruit you like with it; we tend to have fresh berries in summer and either poached quinces or pears during the rest of the year.

A really good yoghurt, such as a sheep's milk yoghurt, will make the muesli taste even better.

Serves 4

Ingredients

  • 2 cups rolled oats
  • 2 Juice of Lemons
  • 1 cup Water
  • 2 granny smith apples
  • 2 cups Plain Yoghurt
  • 6 tablespoons Honey
  • Fresh Fruit to serve or poached in the winter
  • 4 tablespoons Roasted Hazelnuts skinned and crushed to serve

Method

  1. Mix the oats, lemon juice and water together, cover and soak overnight.
  2. In the morning, add the yoghurt to the oats, along with the honey and freshly grated apple.
  3. Keep the mixture quite wet.
  4. Serve into 4 bowls and top with the fruit and hazelnuts.
