Apple and Blackberry Crumble with Vanilla Ice Cream

King of Aussie sunshine food Bill Granger turns out a warm and welcoming crumble in this week's episode of Perfect.

Serves 2

Ingredients

  • 2 apples, cored, peeled and diced
  • 330g cups blackberries
  • 2 tbsp caster sugar
  • 125g plain flour
  • 100g brown sugar
  • 1 tsp baking powder
  • 3 tbsp quick cook oats
  • 100g butter diced
  • Vanilla ice cream to serve

Method

  1. Preheat oven to 200c. Place the blackberries, apple caster sugar and 1 tbsp of the flour in a bowl and toss well to combine
  2. Place sugar, baking powder, oats and remaining flour in a bowl and mix well. Add the butter and rub with your fingertips until the mixture resembles coarse breadcrumbs. Divide blackberries into 2 ovenproof bowls and top with the crumble mix. Bake for 20-25 minutes until golden brown and bubbling, serve warm with vanilla ice cream

RECIPE TIPS:

• This crumble is really quick as you don’t cook the fruit beforehand it all cooks together in the oven

• You could use any seasonal fruit

• Make sure the butter is cold when you are making the crumble topping or it will not form properly and result in a heavy crumble
