Sweet Potato, Capsicum, Spinach and Smoked Wallaby Stack

Ingredients
Wallaby Rumps or similar
Dark Ale
Bay Leaves
Wood Chips (suitable for smoking most camping stores will have)
Sweet potato (peeled and grated)
Egg
Red Capsicum (roasted on grill, peeled and finally sliced)
Baby Spinach
Beef Jus
Juniper Berries

Method
Marinate Wallaby in Ale and Bay Leaves over-night or as long as possible
Set wood chips up in smoker and smoke off the wallaby till a nice golden colour is achieved
Combine Sweet Potato and Egg together with Salt and Pepper, make into small patties and grill on a low heat
Heat Beef Jus and Juniper Berries up and set aside to keep warm
Place Wallaby in Oven and cook to Medium Rare then remove and rest
On plate stack Sweet Potato patties, Capsicum and Baby Spinach
Add finally sliced Wallaby layered on top
Finish with the Juniper Berry Jus
Serve and enjoy.
