Sweet Potato, Capsicum, Spinach and Smoked Wallaby Stack

A tasty dish by Jared Morgan as seen in series 3 or Mercurio's Menu.

Ingredients

  • Wallaby Rumps or similar
  • Dark Ale
  • Bay Leaves
  • Wood Chips (suitable for smoking most camping stores will have)
  • Sweet potato (peeled and grated)
  • Egg
  • Red Capsicum (roasted on grill, peeled and finally sliced)
  • Baby Spinach
  • Beef Jus
  • Juniper Berries

Method

  1. Marinate Wallaby in Ale and Bay Leaves over-night or as long as possible
  2. Set wood chips up in smoker and smoke off the wallaby till a nice golden colour is achieved
  3. Combine Sweet Potato and Egg together with Salt and Pepper, make into small patties and grill on a low heat
  4. Heat Beef Jus and Juniper Berries up and set aside to keep warm
  5. Place Wallaby in Oven and cook to Medium Rare then remove and rest
  6. On plate stack Sweet Potato patties, Capsicum and Baby Spinach
  7. Add finally sliced Wallaby layered on top
  8. Finish with the Juniper Berry Jus
  9. Serve and enjoy.
