Greek Lamb Kebabs

Enjoy the classic Greek salad and lamb kebabs with all the healthy benefits.
Ingredients
450g boneless leg of lamb, trimmed of all fat and cut into 2.5cm cubes
2 large garlic cloves, crushed
1 tbsp extra virgin olive oil
Juice of ½ lemons
Salt and pepper
Greek style salad
6 tomatoes, thickly sliced
1 red onion, finely chopped
1 baby white cabbage, about 225g core removed and thinly shredded
4 tbsp chopped fresh mint
¼ cucumber, halved and thinly sliced
Juice of ½ lemons
1 tbsp extra virgin olive oil
4 wholemeal pitta breads, cut into triangles to serve

Method
Preheat grill. Stir together oil, garlic, lemon juice and chopped oregano in a bowl, add in lamb cubes turning until well coated.
Thread the lamb cubes onto the skewers and place under the grill for 7-8 minutes turning frequently.
Warm the pitas in the grill also during the last few minutes the lamb is cooking.
Toss salad ingredients together in a bowl, seasoning with salt and pepper.
