Scrambled Tofu with Tomatoes, Mushrooms and Fresh Herbs
- 100 grams silken tofu
- ½ tomato diced
- ¼ red onion
- 5 button mushrooms
- 1 celery stick
- Small hand full of fresh basil & continental parsley
- Cut red onion and celery and mushrooms into small pieces.
- Heat a pan to a medium heat, add onion and celery and allow to cook for 1 minute.
- Add tofu, tomatoes and herbs and stir for 2 3 minutes, allow to rest for 1 minute in the pan then serve.
