1 1/3 plain flour
2 tsp baking powder
¼ tsp baking soda
¾ cup cocoa powder
Pinch of salt
60g butter, unsalted
1½ cups caster sugar
¾ tsp vanilla extract
1 cup milk

Preheat fan forced oven to 1700C.
Prepare muffin tin and line it with patty pans.
Sift together the plain flour baking powder, baking soda, cocoa powder and salt.
In a bowl, cream together the butter and sugar until light and fluffy.
Add the eggs one by one, beating well with each addition, then stir in the vanilla.
Add the flour mixture alternatively to milk. Mix well.
Bake cupcakes for 20 minutes or until a skewer inserted into the cake comes out clean.
Decorate the cupcakes when cool.
