Apple and Banana Hot cakes

A lifetime habit of eating fruit and vegetables every day can help prevent heart disease, some forms of cancer and obesity.

Health authorities recommend we Go for 2&5 meaning that adults should go for at least 2 serves of fruit and 5 serves of vegetables every day.

The amount children should eat depends on their age and appetite.

Serves 5

Ingredients

  • 2 Eggs
  • 2 teaspoons Margarine melted
  • 2½ cups milk
  • 2½ cups Self Raising Flour
  • 2 tablespoons Sugar
  • 3 medium Apples peeled, cored and grated
  • 1 teaspoon vegetable oil
  • 2 ripe Bananas sliced
  • 1 tablespoon Honey

Method

  1. In a large bowl beat eggs, margarine and milk.
  2. In a separate bowl mix flour and sugar and gradually stir into wet mixture until smooth.
  3. Fold in apple.
  4. Heat oil in a non-stick pan over medium heat.
  5. Add 2-3 tablespoons of mixture, flip when bubbles appear in the centre of the hotcake and cook until golden brown.
  6. Serve with banana and drizzled honey.
  7. Makes 10.
  8. Variation
  9. Add 1/4 cup sultanas to dry mixture.
