Buffalo Strip Loin

Recipe from Season 2, Episode 3 of Healthy Gourmet.

Serves 6

Ingredients

  • ½ buffalo strip loin
  • sea salt and freshly ground black pepper, to taste
  • 1 clove garlic, minced
  • zest of 2 limes
  • 1 tbsp horseradish, grated
  • garlic-chili flaxseed oil, to taste

Method

  1. Preheat oven to 400 degrees Fahrenheit. Portion buffalo strip loin into “tenderloins” and season with sea salt and pepper.
  2. Sear on medium high heat in a grill pan and finish in the oven. Allow meat to rest before slicing.
  3. Mix together garlic, lime zest, and horseradish. Sprinkle over sliced buffalo. Top with raw flaxseed oil.
