Steamed Mussels In A Chilli Soup

Lovely Simple Mussel Dish
Ingredients
1 kg. of black mussels beards removed & scrubbed
1/2 a cup of white wine
1 bottle of passata
1 green pepper juiliened
4 chopped garlic cloves
4 good pinches of dried chilli flakes
Season to taste
Chopped flat leaf parsley

Method
Heat oil in a pan fry garlic & peppers for 5 minutes
Add wine, chilli & mussels, bring to boil, cover & reduce heat
When mussels are opened transfer to plate 7 pour over soup
Season with salt & pepper & sprinkle chopped parsley over mussel mix

Serve with lots of crusty bread & a few slurps of light red wine!
