Steamed Mussels In A Chilli Soup

Lovely Simple Mussel Dish

Ingredients

  • 1 kg. of black mussels beards removed & scrubbed
  • 1/2 a cup of white wine
  • 1 bottle of passata
  • 1 green pepper juiliened
  • 4 chopped garlic cloves
  • 4 good pinches of dried chilli flakes
  • Season to taste
  • Chopped flat leaf parsley

Method

  1. Heat oil in a pan fry garlic & peppers for 5 minutes
  2. Add wine, chilli & mussels, bring to boil, cover & reduce heat
  3. When mussels are opened transfer to plate 7 pour over soup
  4. Season with salt & pepper & sprinkle chopped parsley over mussel mix

Serve with lots of crusty bread & a few slurps of light red wine!
