Healthy Fried Noodle with Korean Kochujang

Korean food is largely based on rice, noodles, tofu, vegetables, and meats. Commonly used ingredients include sesame oil, doenjang (fermented bean paste), soy sauce, salt, garlic, ginger, pepper flakes and Kochujang (fermented red chili paste).

Serves 4

Ingredients

  • 1 cup of water
  • 300 gm hokkien noodle
  • 100gms uncooked shelled prawns with tails
  • 2 tablespoons of Kochujang
  • 1 tablespoons fish sauce
  • ½ tablespoon kicap manis or sweet soy sauce
  • 2 eggs - slightly whisked
  • 200 gms bean sprouts
  • 100 gms garlic chives - cut into 3cms pieces

Method

  1. Pour 1 cup of water into a hot wok - let it boil
  2. Add hokkien noodle and prawns
  3. Cover and cook for 5 mins
  4. Add Kochujang, fish sauce and kicap manis
  5. Cook noodles for 5 mins until no liquid is left
  6. Push noodles to one side
  7. Add eggs and lightly scramble - mix noodles and eggs together
  8. Cover and cook for 3 mins
  9. Turn off heat and add bean sprouts and garlic chives
  10. Stir and mix well
  11. Sprinkle fried shallots before serving

Notes & Tips

No oil is used in this frying method. Red pepper paste "Kochujang" is a Korean traditional fermented soybean-rice-red pepper powder paste.
