Banana & Date Muffins

I have had quite afew people ask me why my muffins taste so good....it is no secret...just keep it simple! I often use honey as an alternative to sugar. Try using a 'yellow box honey' or 'iron bark honey'. These types use honey which comes from areas where these Eucalyptus trees are flowering. It adds a subtle & unique flavour.

Serves 6

Ingredients

  • 3 large eggs
  • 200g Natural Yoghurt
  • 150g Australian Honey
  • 50g Butter
  • 150g Pitted Dates
  • 3 Ripe Bananas
  • 300g Self Raising Flour

Method

  1. Halve the dates & soak for 10 minutes in boiling water. This helps to soften them. Also check there are no pips left in!
  2. Crack the eggs in a large bowl, add the yoghurt, honey and melted butter. Whisk lightly. Now use your fingers to mash the bananas straight into the bowl. Remove the dates from the water & add to the mixture. Stir through the flour, no need to sift.
  3. Spray a muffin tin with oil or grease with butter, add the mixture to just below the top of the tin. Bake for 25 minutes at 180'C.
  4. Always check your muffins 5 minutes before the timer goes off, due to oven variations.
  5. Turn out on a wire rack and allow to cool.
  6. Enjoy with some cream!
