Chocolate Angel Food Cake


Chocolate Angel Food Cake

A light, fluffy, sponge that will impress your friends.

Serves 4 to 8

Ingredients

  • 7 large eggs
  • 1 Cup Caster sugar
  • 1 Cup Self Raising Flour
  • 1½ Cup Drinking Chocolate
  • 1 ts Vanilla Essence
  • 1 tbs Lemon juice
  • ¾ Cup Canola Oil
  • 1 Cup Boiling Water
  • ½ Cup Icing Sugar to dress

Method

  1. Pre Heat oven to 160C degrees C
  2. Separate eggs into two bowls
  3. Beat egg whites with 1/2 cup sugar and lemon juice until soft peaks and set aside
  4. Combine the egg yolks with remaining sugar
  5. Add Oil and Vanilla essence and beat at low speed
  6. Add Sifted flour to mix 1/3 at a time and slowly add the boiled water, also in parts
  7. Take the beaten egg whites and carefully fold into chocolate flour mix, taking care not to let the air out of the egg whites
  8. Spoon into Angel Food cake tin, taking care not to mess up the sides of the tin
  9. Run a knife through mix to release any large air bubbles inside
  10. Bake for 45 mins. Check with a wooden skewer if cooked.
  11. Remove from oven and invert the tin onto a bottle or glass and let cool
  12. When cool, remove cake from tin. You may need to run a knife around the edges and the base of the cake
  13. Dress with Icing sugar and serve with a dollop of double cream or ice cream

Notes & Tips

You can try different flavors. My other fave is Lemon, so replace the chocolate with 1/2 cup lemon juice and the zest of one lemon. Bon Appetito
