Bircher muesli with berries

Ingredients

  • Serves 4
  • Standing time 1 hour
  • Prep time 10 minutes
  • 2 cups (180g) rolled oats
  • 1 cup (250ml) apple juice
  • 1 cup coarsely grated apple
  • 1/2 cup (140g) natural low-fat yogurt
  • juice of 1/2 lemon
  • 1 cup mixed berries (see tip)
  • 1 tablespoon honey

Method

  1. Place the oats and apple juice in a bowl and soak for 1 hour or overnight. Stir through grated apple, yogurt and lemon juice just before serving.
  2. Spoon into serving bowls and top with mixed berries and honey.

Tips:

Strawberries, blueberries and raspberries are a delicious mix.
