Busy day chicken
Quick and easy chicken main meal
1 barbecue chicken, meat removed and chopped into small pieces
2 cups vegetables (eg sliced carrot, broccoli flowerets, small can drained corn niblets) 440g can cream of chicken soup
½ cup mayonnaise
1 teaspoon curry powder
½ cup grated cheese

Preheat oven to 190°C.
Place vegetables and chicken into well-greased flan dish.
Combine soup, curry powder and mayonnaise and pour over chicken and vegetables. Sprinkle with grated cheese and then a thin layer of breadcrumbs.
Dot with butter and cook in oven, uncovered, for 1 hour at 190°C. Serve with rice.
