Easy pumpkin soup

This recipe is so easy yet totally delicious and great for those who have to watch their sugars. You can also substitute sweet potato for the pumpkin.

Ingredients

  • pumpkin (your serving size of pumpkin depends on number of mouths to feed)
  • 1 can reduced fat evaporated milk
  • chopped parsley
  • pepper and salt, to taste

Method

  1. Cook the pumpkin in boiling water until tender. Drain and mash, gradually adding the evaporated milk until it is a soupy consistency.
  2. Season to taste and garnish with a sprinkle of chopped parsley. Serve with hot toast or croutons.
