Almond cake served with vanilla bean ice-cream

Try Helen's almond cakes from the first episode of COME DINE WITH ME AUSTRALIA series 2.

Ingredients

Cake

  • ½ cup oil
  • 1 cup caster sugar
  • 1cup bread crumbs
  • 6 eggs
  • 2 cups almond meal
  • 1 teaspoon vanilla
  • 1 cup crushed Almonds
  • 320g thickened cream
  • 2 tablespoon sugar

Cake Syrup

  • 1 cup water
  • 2 tablespoons sugar
  • Squeeze of lemon

Method

Cake

  1. Pre heat oven to 180 degrees.
  2. Combine oil and sugar in a bowl and mixer with an electric mixer. In a separate bowl beat egg white until light and fluffy.
  3. Add this to oil and sugar mixture and fold through. Slowly add egg yolks one at a time and mix. Add bread crumbs, almond meal and vanilla.
  4. Pour mixture into a baking tin and cook on 180 degrees for 40 min. Allow cake to cool

Cake Syrup

  1. Combine ingredients in a small bowl and stir.

To Serve

  1. Drizzle syrup over cake. Store cake in fridge overnight.
  2. Beat together cream and sugar until thick. Cut cake in half and put a layer of cream on one side. Put half back on top.
  3. Coat the outside of the cake in cream and crushed almonds.
  4. Serve with Vanilla Bean Ice Cream
