sweet potato,leek&carrot soup

Ingredients
300gms sweet potato
1 leek
300gms carrots
2tps curry powder
2cups chicken stock
1tbs butter
1/4 cup of sherry
sceam (optional)

Method
* roughly chopp vegetables
* melt butter in a large saucpan and add vegetables
* stir in curry powder and mx through vegetables
* add stock,bring to boil & simmer for 10 minutes
* when vegetables are tender place in a blender to creat a smooth mx
* return to saucpan,add sherry and heat
* serve into bowls with a dollop of cream on top and parsley sprig
