Texan Beef Ribs with Bourbon Sauce
Serves 4 to 6
Ingredients
Rub
- 3 tbs Paprika- smoky
- ¼ cup sea salt
- ¼ cup cumin seeds
- 1 tbs pepper corns
- 2 tbs fennel seeds
- 2 Tsp dried chilli flakes
- 1/3 cup dark brown sugar
- 3 tbs olive oil
Sauce
- 1 ½ cup chopped shallots
- 2 tbs chopped garlic
- 1 tbs Oil
- 2 cups bourbon
- 1 cup tomato puree
- 2/3 cup maple syrup
- 1 tbs balsamic vinegar
- Sometimes I add a little orange juice and rind!
Method
Rub
- Stick the spices and sugar in blender and blitz till all ground up
- Place into a bowl and add oil - mix together and rub all over beef
- Place beef on foiled tray and bake uncovered for 4 to 5 hrs at 150deg
- The cooking time can differ with the size and age of the beef. It’s ready when the meat comes off the bone easily.
To prepare the sauce
- Saute shallots and garlic for a few minutes
- Add bourbon and reduce liquid to about half - flambe if you are feeling like a bog.
- Add rest of ingredients and simmer
- Taste for balance and seasoning
- Serve with ribs
