Bacon and Zucchini Omelette

Eggs are a great source of nutrients and this super simple breakfast dish from episode one of Matthew Hayden’s Home Ground is a nice way to jazz them up.

Serves 2

Ingredients

  • 2 eggs
  • 1 medium sized zucchini (chopped)
  • 4 rashers bacon (chopped)

Method

  1. In a medium sized bowl crack two eggs and beat vigorously.
  2. Heat small pan and sauté chopped bacon and zucchini.
  3. Once cooked, pour egg mixture over the top of the bacon and zucchini mix.
  4. When the omelette becomes solid, fold in half and serve!
