Quesadillas


Quesadillas

Serves 1 to 2

Ingredients

Prawn Quesadilla

  • 2 tortillas
  • 2 Table spoons cooked prawns, thinly sliced
  • 2 Tablespoons grated Edam cheese
  • A few coriander or baby spinach leaves

Chicken Quesadilla

  • 2 tortillas
  • 2 Tablespoon leftover chicken, finely diced
  • 1/2 spring onion, finely sliced
  • 2 Tablespoons grated Edam cheese

Salsa

  • 1 tomato, peeled & flesh finely diced
  • ½ small Spanish onion, finely diced
  • 1 red birds eye chilli, finely chopped (omit seeds if too hot)
  • Finely sliced coriander (a couple of sprigs)
  • Squeeze of ½ Lemon or lime
  • Sea salt & pepper
  • Drizzle of oil

To Serve

  • Sour cream
  • Chives

Method

  1. On a medium hot pan, lay down a tortilla. Sprinkle on the cheese first then add the other ingredients. Place the second tortilla on top and press down to flatten the quesadilla.
  2. When the quesadilla has warmed through, flip it over to cook on the other side for a minute.
  3. Cut the cooked quesadilla into slices. Top with a dollop of sour cream, a bit of salsa and chives.
