On a medium hot pan, lay down a tortilla. Sprinkle on the cheese first then add the other ingredients. Place the second tortilla on top and press down to flatten the quesadilla.
When the quesadilla has warmed through, flip it over to cook on the other side for a minute.
Cut the cooked quesadilla into slices. Top with a dollop of sour cream, a bit of salsa and chives.
