Asparagus Wild with Salmon

Serves 2

Ingredients

  • Bunch asparagus (about 500g)
  • 4 large eggs (raw)
  • 2 hard-boiled eggs, chopped
  • 1 Tbsp butter
  • Pinch cayenne pepper
  • Pinch white pepper
  • 1 Tbsp cream
  • 1 Tbsp chives, chopped finely
  • 150g smoked salmon or cooked salmon

Method

  1. Wash the asparagus and cut off the ends.
  2. Cook in rapidly boiling water for 3 -4 minutes,
  3. In another pan, put butter and allow to melt over a low heat. Add raw eggs and stir vigorously. Cook for two or three minutes until the eggs begin scrambling (firm up).
  4. Add the peppers and cream, stir and cook for a minute or so.
  5. Stir in hard-boiled egg, add some chopped chives and the dish is ready.
  6. Drain the asparagus and set a few on each of two plates, placing the egg mixture on the side with a topping of pieces of salmon.

Notes & Tips

If you do want to cook the salmon simply you can place it between two pieces of grease-proof paper and rest a hot iron on top for 2 minutes on each side … perfect for a last minute option in a hotel room.
