Quick Pork curry

Anna coks Ian a simple pork curry ... it's the perfect pork recipe for a slow cooker ...

Ingredients

  • 2½ kg boneless pork shoulder, diced

Paste

  • 15 dried red small chillies
  • 6 shallots, roughly chopped
  • 8 cloves garlic
  • 2 ½ Tablespoon ginger, peeled and finely chopped
  • 2 ½ Tablespoon galangal, peeled and chopped
  • 1 teaspoon shrimp paste
  • 2 stalks lemongrass, peeled and roughly chopped
  • Dash vegetable oil
  • Pepper and salt

To cook

  • Peanut oil
  • 850mls coconut milk
  • 4 kaffir lime leaves
  • 2 star anise
  • 1 cinnamon quill
  • 6 cardamom pods
  • 2 lemon grass, bashed and tied in a knot

Method

  1. Blend paste ingredients together in blender with the vegetable oil.
  2. Heat oil in pressure cooker and fry paste, add meat and coat well.
  3. Add coconut, lime leaves, and spices.
  4. Place lid on pressure cooker and follow manufacturer’s instructions for operation.
  5. In a pressure cooker it will be tender and ready in 45 minutes, if you use an oven- slow bake in covered casserole dish on 150 deg for 3 hours or until tender.
  6. Serve with rice
