Blend paste ingredients together in blender with the vegetable oil.
Heat oil in pressure cooker and fry paste, add meat and coat well.
Add coconut, lime leaves, and spices.
Place lid on pressure cooker and follow manufacturer’s instructions for operation.
In a pressure cooker it will be tender and ready in 45 minutes, if you use an oven- slow bake in covered casserole dish on 150 deg for 3 hours or until tender.
