Bak Kwa or Asian BBQ Meat

This is an Asian type of Meat Jerky. It is a must during the Lunar New Year in Singapore. This is everyone's favourite snack.

Serves 10

Ingredients

  • 1.5kg pork fillet/tenderloin – minced
  • 350gms organic maple syrup or 320gms sugar
  • 3 tablespoons light soy sauce
  • 4 tablespoons Korean hot sauce paste/Gojungjang
  • 3 tablespoons oyster sauce
  • 3 tablespoons sesame oil
  • 2 tablespoons Hua Tiao Chew/Chinese wine
  • 2 tablespoons ikan billis powder – roast ikan billis and pound
  • 2 tablespoons Hungarian sweet paprika

Method

  1. Mix the above ingredients and marinade overnight.
  2. Crush foil, straighten foil out and line baking pan.
  3. Spread marinated meat evenly on foil
  4. Flatten meat with an oiled empty small sauce bottle (this will act as a rolling pin) Roll out till very thin and even.
  5. Dry flattened meat in a preheated 100 C oven for about 4-5 minutes
  6. Please do not cook meat.
  7. Cool meat on a wire rack.
  8. Cut dried meat into squares
  9. Grill meat under a very hot grill for about 2-3 mins .
  10. Enjoy Bak Kwa with a glass of beer

Notes & Tips

The drying process is very important. If you grill the meat without the drying process it will turn out to be dry, hard and burnt.
