600g pink snapper, in 4 thick fillets
½ cup pistachio
1 cup coriander, stems and leaves
¼ cup of lime juice
Pinch cayenne pepper
2 cloves garlic
Dash of olive oil
Sea salt and pepper

Blitz all crust ingredients together.
Portion fish, season and spread crust over top of each fillet.
Place on baking tray with baking paper and bake in hot oven for about 15 to 20mins until just cooked through.
Serve with a simple salad
