Spicy dry lamb experiment

well it was at first just throwing in whatever i thought would taste good and in the end it did :) its juicy soft lamb, but not exactly a curry. I had it with simple cinnamon steamed rice. Tasted really good. Hope you like it. Sorry i don't know measurements, i just threw in all the stuff, according to what i felt.
Ingredients
- Marinade:
- Lamb, boneless cut into thin strips - 1/2 kg
- honey to make it slightly sweet
- fresh ground pepper (as per taste) plenty to make a bit spicy
- plenty of dark soy sauce
- little salt (there is soy so add more salt later after tasting)
- red wine vinegar (about a tbsp)
- Rest of the ingredients:
- mustard oil - 1/2 tbsp
- sunflower oil - 1 tbsp
- 4-5 cloves garlic (finely sliced)
- a medium small piece of ginger (finely sliced)
- onion (sliced so it separates)
- grated raw mango - 1 tsp
- chili flakes ( as per taste)
- finely chopped coriander (enough to garnish)
- finely chopped mint leaves (enough to garnish)
Method
- Marinate the meat and leave for a few hours (mix everything and rub on the meat)
- In a pan that can be covered (to steam) put the oils and heat.
- Add garlic, onion and ginger, saute till golden.
- Add the raw mango, chili flakes and the meat.
- Add little water enough to cover the meat.
- Cover the pan and steam till cooked.
- Add the mint and coriander and stir.
- Add water occasionally if necessary. Dry the meat only to leave a little sauce.
- Steam rice with cinnamon stick to give it fragrance.
- Serve hot with meat
