Self Saucing Chocolate Pudding

simply divine. If you are a fan of chocolate, then you will love my take on a good chocolate pudding, this one with a perfect chocolate sauce.

Serves 2 to 4

Ingredients

  • 1 cup self raising flour
  • 2 T cocoa powder
  • 1/2 cup brown sugar
  • 80g butter, melted & cooled
  • 1/2 cup milk
  • 1 egg, lightly beaten
  • ------Sauce
  • 3/4 cup brown sugar
  • 2 T cocoa powder
  • 1 1/4 cup boiling water

Method

  1. Preheat oven to 180˚C. Grease two Pyrex bowls.
  2. Sift flour and cocoa into a large bowl, stir in sugar.
  3. Combine butter, milk and egg in a jug. Slowly add to flour mixture, whisking until well combined and smooth
  4. place into baking dish (smooth top).
  5. SAUCE; sprinkle combined sugar and cocoa over pudding
  6. Slowly pour boiling water over the back of a large metal spoon to cover pudding.
  7. Place dish onto a baking tray
  8. Bake for 35 to 40 minutes or until pudding bounces at touch.
