Beef Tagine with Green beans ( pressure cooker recipe )

I love this meal, it is so tasty. I always mourn when the plate is empty and it's all gone.

Serves 6

Ingredients

  • 1½ Kg of beef heel
  • 1 Kg Green beans, frozen or fresh it is upto you, cut into 3cm lengths
  • 2 Medium to large Onions, diced
  • 3 extra medium Onions, sliced
  • 6 Cloves of garlic, crushed
  • 1 Large tomato, halved then grated and skin discarded
  • 4 Tbs Fresh flat leaf parsley, chopped finely
  • 4 Tbs Fresh coriander, finely chopped
  • 1 Generous Tbs Ground Ginger
  • 1 Tsp Pepper
  • Good pinch of artificial saffron
  • 1 tsp Salt
  • 1 Beef stock cube
  • ¼ cup of vegetable oil
  • ¼ cup of good quality olive oil
  • 2 Tbs Butter

Method

  1. Arrange Pieces of meat in pressure cooker, Add the garlic, ginger, saffron and salt. Pour on the oil and fry lightly for 5 minutes then add the tomato and the diced onions.
  2. Add enough water to just cover and bring to the boil, when cooker begins to whistle lower the heat and simmer for 50 minutes.
  3. Meanwhile steam the beans.
  4. Melt butter in a pan and add the sliced onions, crumble in the stock cube and fry gently until nicely golden, about 10 minutes while stirring. When golden add your beans, pepper, salt to taste and 2 Tbs of the parsley. Leave to sit for 5 mins on a very low heat.
  5. When meat is cooked add the remaining parsley and the coriander and fry gently for 5 mins. If needed cook longer to reduce the sauce.
  6. Serve on a large round plate ( for all to share from as custom ) with meat pieces on the bottom with the sauce poured over them and decorate with the green beans on top.

Notes & Tips

As usual for Moroccan foods this is delicious with some freshly baked bread to mop up the delicious sauces and to pick food up with.
