Curried Cous Cous Salad

I wanted a new salad to make for christmas lunch and simply made this up from ingredients that l like. This made from ingredients l had in the pantry so l could make any time.

Serves 6 to 8

Ingredients

  • 1 cup instant cous cous
  • 1 onion finely choped
  • 1 carrot chopped
  • 1 teaspoon minced garlic
  • 2 medium tomatoes chopped
  • 2 cups massel chicken stock
  • 1 heaped tablespoon malaysian curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon tumeric
  • 1 teaspoon oil
  • 3 tablespoons of dried parsley flakes
  • 1 small can chickpeas rinsed, chickpeas

Method

  1. chop onion finely
  2. lightly fry in teaspoon of oil in medium saucepan
  3. add curry powder,cumin,garlic,tumeric
  4. cook for 1 minute
  5. add chicken stock and bring to the boil
  6. add instant cous cous turn off heat and cover for 5 minutes
  7. finely chop tomatoes and carrot
  8. fluff cous cous with fork
  9. add tomato, carrot, chickpeas and parsley
  10. serve chilled

Notes & Tips

l use massel stock as it contains no animal products and Ayam curry powder
