Easy Spaghetti with Meatballs …

I made this up for my brother last night when he called with $10 in his hand at the supermarket ... It's great recipe for kids just starting out in the kitchen: cheap, easy, filling and it tastes good! It is worth buying the best sausages you can as they will provide the extra flavour.

Serves 2

Ingredients

  • 250g spaghetti
  • Olive Oil
  • 1 garlic clove, skinned and squashed with the side of your knife
  • 3 good quality sausages
  • 1 can peeled whole tomatoes
  • Handful of basil leaves
  • Parmesan cheese, to serve

Method

  1. Bring a large pot of water to the boil. When it is boiling rapidly (big bubbles) add a big of pinch of salt and then the spaghetti. Stir regularly for the first couple of minutes to avoid it sticking together.
  2. Meanwhile heat a good glug of olive oil in large frying pan over medium heat.
  3. Add the whole clove of garlic (this is to flavour the oil).
  4. Squeeze small balls of sausage mince out of the casing and directly into the frying pan. Allow them to brown on each side, shaking the pans rather than stirring so that you don’t break up the balls.
  5. At this point you can remove the clove of garlic.
  6. When the sausage balls are browned all over add the tin of tomatoes and some salt and pepper. Use a wooden spoon to gently squash the tomatoes.
  7. Allow sauce to simmer on a low heat until your pasta is cooked, adding a little pasta water if the sauce gets too thick.
  8. Drain pasta, add to sauce (or serve in a bowl with sauce on top).
  9. To serve tear over some fresh basil leaves and grate some parmesan.

Notes & Tips

If the spaghetti is ready before the sauce, drain it and pour over a good glug of olive oil … this will stop it sticking together.
