Simple Spinach Pasta:

An easy recipe to make when you’re in a hurry.

Serves 4 to 6

Ingredients

  • 500gm pasta (any shape you like)
  • 250gm Spinach leaves whole (frozen)
  • 1 cup milk
  • 2 glasses (240ml size) white cream cheese (like Pock or Mara3i)
  • 1 tsp Chilli flakes
  • 2 tsp salt
  • ½ tsp black pepper
  • 4 tbsp extra virgin olive oil
  • 4 tbsp lemon juice
  • 2 cubes chicken stock

Method

  1. cook pasta in boiingl water with salt and little oil for 10min maximum, till ala dente.
  2. Meanwhile, in a deep casserole, heat olive oil, add chicken stock, stir for 1 minute then add spinach. Bring to boil then add salt, pepper and chilli.
  3. Add cream cheese and milk. Bring to boil, simmer for 5minutes. Add lemon juice now, season to taste.
  4. Add cooked pasta to creamy mixture. Simmer over low heat for 3 minutes. Serve hot.

Notes & Tips

You can use fresh spinach, but you’ll need then 500gm of it, and you’ll need to cook for longer time in step number 2, like about 10minutes before adding cheese and milk.
