Quiche

Lorraine Quiches.... everyone loves different quiche fillings, this is one i use and i cant believe im sharing....

Serves 12

Ingredients

  • 2 sheets of shortcrust or the same amount of home made shortcrust (enough to fill 12 muffin tins)
  • 3 eggs
  • 100ml cream
  • 2 finely diced bacon rashes
  • juice of one tomato and the flesh from one half diced finely
  • 1/2 small onion diced finely
  • 1 cup tasty cheese grated
  • 1/2 cup vintage cheese grated
  • 3 tbsp parmesan cheese grated
  • salt (pinch) (the bacon is salty)
  • pepper
  • onion and garlic powder
  • chives- optional
  • 1/2 cup grated cheese to top.

Method

  1. cut your pasrty either into circles ot squares to fit the muffin tins
  2. grease the tins and line with pastry
  3. mix all remaining ingredients together (except remaining cheese)
  4. scoop into the pastry
  5. top with remaining grated cheese
  6. bake at 200 for 15-20 minutes till golden and risen
  7. cool 10 mins and serve.

Notes & Tips

this recipe is NON FAIL and when i go to a party i use the mini tins or patty pans and make about 60 odd from a packet of shortcrust. very proud of this recipe and its loved by everyone who tries it.
