Potato-stuffed pastries (Moaájanat Batata)

This is one of my favourite stuffed pastries, and so easy to prepare. Make them along with Sfiha and Moaájanat sabanekh (meat stuffed pastries and spinach stuffed pastries). They work as great entries, light evening snacks, for a brunch, or for an afternoon gathering.

Ingredients

  • Arabic dough (check: Sfiha dough)
  • 3 Large potatoes
  • ½ tsp chilli powder
  • Salt& Black Pepper
  • ½ cup Parmesan cheese powder

Method

  1. Prepare dough and leave to rest till it doubles in size.
  2. Meanwhile, wash& peel potatoes. Cut into large cubes. Place in boiling water and cook for about 20 minutes or until tender.
  3. Drain potato cubes and mash while hot. Add cheese, chilli powder& black pepper. Add salt to season. Stuffing is ready.
  4. Cut dough into walnut-size ball, or little larger size. On working surface, flatten a dough ball to form a circle; place a tablespoon stuffing in the middle. Fold edges of the circle over the stuffing to from any shape you like. Place in greased baking tray (preferred aluminium or stainless steel).
  5. Continue in same method till all stuffing is over.
  6. Bake in 495F (240C) hot preheated oven, place on high third rack (NOT on middle rack). Bake for about 15minutes or till bottom and top are golden.
  7. Serve warm with yogurt or salad.
  8. This makes about 36pieces (according to the size).
