Ceviche

Ben's entree from series 1 of Come Dine With Me Australia

Serves 4

Ingredients

  • 600g of white fish cooked in the juice of 5 limes
  • 1 birdseye chilli
  • ½ bunch of chopped coriander
  • 1 bunch of shallots
  • ½ Spanish onion
  • Handful of seeded and finely diced grape tomatoes
  • 1 avocado finely diced
  • 1 cucumber finely diced
  • Salt and pepper to taste

Method

  1. Cube fish, place in a bowl and cover with lime juice and chilli. Leave to cure for one hour
  2. Mix coriander, shallots, Spanish onion, tomatoes and avocado and add to fish
  3. Mix well and serve with fresh coriander and a drizzle of olive oil
