Josie’s Crunchie Bar Cheese Cake Martini

Serves 4

Ingredients

  • 375 g cream cheese, softened
  • 1/4 cup castor sugar
  • 3 tsp vanilla essence
  • 3 tsp gelatine mixed with 1/4 cup boiling hot water
  • 3 Crunchie bars, crushed
  • 300 ml cream, whipped
  • 1 packet Ginger Nut biscuits crushed
  • 2 tbsp melted butter

Method

  1. Mix softened cream cheese and sugar with electric mixer until creamy. Add the vanilla essence and mix through
  2. Melt gelatine in a cup and mix it through the cream cheese mixture
  3. Add crushed crunchie bars and fold the whipped cream through the cream cheese mixture
  4. Melt the butter and mix into the crushed biscuits
  5. Layer the martini glasses with the biscuit mixture, spooning the cheese mixture on top
  6. Put in the fridge and chill until firm. Serve with some sprinkles of crunchie on top
