Broccolini and Mushroom Stir Fry

1/3 cup peanut or vegetable oil
1 tbsp ginger, finely sliced or grated
2 garlic cloves, sliced
1 long red chilli, sliced
4 bunch broccolini, trimmed, washed and cut in half lengthways
200g enoki mushrooms, stalks trimmed, quickly rinsed
150g oyster mushrooms, stalks trimmed, quickly rinsed
2 tbsp mushroom or light soy sauce
1 tbsp kepas manis
2 tbsp caster sugar
2 shallots, trimmed, washed and sliced into rounds

Heat oil in a wok over a high heat until starting to shimmer.
Add ginger, garlic and chilli and cook for a few seconds, stirring with a spoon.
Add broccolini and fry for 1 minute. Add mushrooms and toss well.
Add both soy sauces and sugar and allow to simmer for 30 seconds, tossing a few times to cover broccolini.
Place in a serving bowl and garnish with shallots.
Notes & Tips
*Kepas Manis is a thick, sweet soy sauce available from supermarkets and Asian grocery stores.
