Rachael's Potato Salad

This recipe is for a mushy, creamy, bacony, cheesey potato salad. This salad is a family favourite, and is soooo yummy, people are always coming back for 2nds, 3rds, 4ths etc

Serves 2 to 4

Ingredients

  • 1 kilo of potatoes - peeled, rough diced and cooked
  • 750g Shortcut rindless bacon, diced and cooked.
  • 6 hard boiled eggs- roughly chopped
  • 250g tasty cheese, cubed
  • 1 Spring onion/shallot - whatever you call them! sliced
  • 4-5 tablespoons good creamy mayo

Method

  1. Place potatoes, bacon, cheese, eggs, mayo & spring onions in a bowl. Mix well together, not too roughly or you'll end up with mashed potatoes!
  2. When combined, place in a serving dish. Garbish with slivers of spring onions.

Notes & Tips

I use generic brands, so please do not feel you must use the most expensive brands or food types. This recipe will work with any old thing!
