Platter of Roast Vegetables

Ingredients
- About 6 or 400gr kifler potatoes
- 2 large or 400gr sweet potatoes
- 1 large or 400gr fennel
- 2 Large or 300gr carrots
- 2 large or 300gr parsnip
- 2 large or 300gr onions
- 30gr Za-Atar spice
- 60ml extra Virgin olive oil
- Sea Salt & Cracked Black pepper
- 30gr (2 Tbsp) Butter
Method
- Peel & slice root vegetables, drizzle over extra virgin olive oil, salt &
- pepper.
- Roast at 180’c for 35mins or until all tender
- Then add Za-Atar spice and butter and cook for another 5 minutes and
