Ingredients

  • About 6 or 400gr kifler potatoes
  • 2 large or 400gr sweet potatoes
  • 1 large or 400gr fennel
  • 2 Large or 300gr carrots
  • 2 large or 300gr parsnip
  • 2 large or 300gr onions
  • 30gr Za-Atar spice
  • 60ml extra Virgin olive oil
  • Sea Salt & Cracked Black pepper
  • 30gr (2 Tbsp) Butter

Method

  1. Peel & slice root vegetables, drizzle over extra virgin olive oil, salt &
  2. pepper.
  3. Roast at 180’c for 35mins or until all tender
  4. Then add Za-Atar spice and butter and cook for another 5 minutes and
