Middle Eastern Brown Rice Pudding

Middle Eastern Brown Rice Pudding

Serves 4

Ingredients

  • 1 cup organic brown rice
  • 3 cups milk like soy or almond
  • 2 tbls orange zest
  • Juice and pulp from one orange
  • 1 apple, peeled then grated
  • ½ cup raisins, organic
  • 2 cardamom pods, squashed
  • 1 tsp of ground cinnamon
  • 1 vanilla pod, split and scraped
  • 1 tsp rose water
  • ½ cup pistachios, roughly chopped or slithered almonds
  • ¼ cup grated palm sugar, or to taste

Method

  1. Put all the ingredients, apart from the sugar in a saucepan. Bring to a slow boil the drop back to a simmer. Stir fairly constantly to prevent from sticking, or use a non-stick pan. It will take about 60 minutes for the rice to soften. You may need to add more water if it’s getting too thick. Add the sugar right before serving and stir. To serve, sprinkle each bowl or tall glass with a few nuts and orange rind and juice. In warmer months, chill before serving. You can bake dish this also for a warm dessert in winter.
