Curried Tuna Slice

Sounds weird but trust me the flavours work so well...can use any fish really, even smoked types. Great for leftover lunches!

Serves 4

Ingredients

  • 500 g drained tuna (or fish of choice)
  • 4 x cups chicken stock
  • 2 x tsp curry powder
  • 1 x cup long grain rice
  • 1 x egg lightly beaten
  • 2 x eggs lightly beaten
  • 3/4 x cup milk
  • 3/4 x cup cream (light)
  • 1 x cup grated tasty cheese (light)
  • 4 x chopped shallots
  • 1 x Tbs dry mustard powder
  • 2 x Tbs chopped parsley

Method

  1. Preheat oven to 180C
  2. Bring stock to the boil in a medium saucepan. Add curry powder and rice and reduce to a simmer. Cover for half an hour.
  3. Remove from heat and stir in 1 edd.
  4. Spread the rice into a greased lamington tin.
  5. Place fish over the rice, pressing down lightly.
  6. Combine remaining ingredients in a bowl and pour over top.
  7. Bake for 30 mins or until slightly brown.
