Almond Shortbread


Almond Shortbread

a wonderful recipe from my dear friend Douglas H.

Ingredients

  • 250g butter, softened in microwave oven
  • half a cup of caster sugar
  • 1 teaspoon vanilla essence
  • 2 and a quarter cups of plain flour
  • 100g flaked almonds

Method

  1. Preheat oven to 150C fan forced
  2. Beat butter, sugar and vanilla till light and fluffy (approx 5 mins)
  3. Stir in sifted flour and almonds
  4. Roll rounded teaspoons of mixture into balls.
  5. Place 2cm apart on greased oven trays.
  6. Press slightly with a fork.
  7. Bake for for about 20 minutes or until pale straw colour.
  8. Let stand 10 minutes on tray before transferring to a wire rack to cool.
  9. When cool, sprinkle with icing sugar.
  10. Makes about 35-40 biscuits

Notes & Tips

I rolled half the batch & 'formed' the other half using a teaspoon. The unrolled biscuits looked nicer and less uniform in my opinion.
