Thai Crab Pumpkin Soup


Thai Crab Pumpkin Soup

Nice smooth soup with slight taste of crab, you can elimate crab meat if required....

Serves 6 to 8

Ingredients

  • 1 onion ,finley chopped
  • 1 Small Jap Pumpkin (really yellow inside) cut into 2cm cubes
  • 2 cloves crushed garlic
  • 2 tblspoon butter
  • 1 Tin coconut cream
  • 1 tsp cracked peppercorns
  • 1 125g crab meat
  • 1 tbl spoon brown sugar
  • 2 tbl spoon tom yung paste (or red curry paste)
  • 1 cup chicken stock

Method

  1. Saute onion, garlic, peppercorn
  2. add pumpkin and saute for a further 2 mins
  3. add chicken stock coconut bring to boil.
  4. Add sugar, tom yung paste and crab meat and
  5. simmer for another 10 mins- Allow to cool
  6. Place all into blender and blend till smooth.
  7. Heat when required......
  8. Add more paste if you like your thai soup spicy !!
