Easy Grilled Chicken Breasts with Fresh Herbs

This simple and healthy chicken dish makes a great dinner for the family.

Ingredients

  • 4 chicken breasts, preferably with skin on
  • ½ bunch chopped flat leaf parsley
  • 2 stalks fresh rosemary, finely chopped
  • ½ bunch thyme, freshly chopped
  • 3 cloves garlic, finely chopped
  • 2 splashes olive oil
  • 120 ml balsamic vinegar
  • salt and pepper to taste

Method

  1. Combine the parsley, rosemary, thyme, garlic, oil, vinegar and salt and pepper to taste. Blend together. Place chicken in a glass dish or bowl and pour blended marinade over the chicken. Cover dish and refrigerate to marinate for at least 2 hours or up to 24 hours.
  2. Preheat grill to medium high heat or heat barbecue.
  3. Remove chicken from dish (disposing of leftover marinade) and grill for about 6 to 7 minutes per side, or until chicken is cooked through and no longer pink inside.
