Prawn on an Avocado Stack

Peter Evans takes a look at some old favourites, think Steak Diane, Prawn Cocktails and Oysters Kilpatrick. The legendary prawn cocktail generally consisted of shredded iceberg lettuce, cocktail sauce and a fan of avocado on the side. Pete shows that in the kitchen what goes around comes around but with a twist, and puts a modern spin on the classic prawn cocktail.

Serves 1

Ingredients

Prawns

  • 4 cooked Prawns de-veined & shelled
  • ½ cubed Avocado
  • 1 diced overn dried Tomato
  • 1 teaspoon Lemon Juice
  • 1 teaspoon Extra Virgin Olive Oil
  • 1 teaspoon chopped Coriander
  • 1 teaspoon diced Spanish Onion
  • Salt
  • Pepper

Basil oil

  • basil leaf
  • Extra Virgin Olive Oil

Chilli oil

  • ½ Capsicum
  • 1 Chilli
  • Extra Virgin Olive Oil

Method

Prawns

  1. Mix the avocado, tomato, lemon juice, coriander, olive oil and onion in a bowl and place into a biscuit cutter on the centre of a plate.
  2. Place the basil and chilli oils around the avocado.
  3. Place the prawns onto the avocado and garnish with a sprig of coriander.

Basil oil

  1. Add enough oil to the basil in a blender until it turns to a sauce consistency

Chilli oil

  1. Add enough oil to the chilli and capsicum in a blender until it turns to a sauce consistency
