GOOEY & DELECTABLE Jersey Caramel & BANANA Mini Muffins

A Delicious mini treat, that allows you to utilise any old bananas, rather than wasting them, by binning them. The gooey warm Caramel interior is a delectable surprise. A great way to get some fruit into your kiddies aswell, without them even realising it!

Serves 36

Ingredients

  • 120 g Jersey Caramels cut into quarters
  • 2 Cups Self Raising Flour
  • 1 Cup Plain Flour
  • 1 Teaspoon BiCarbonate Of Soda
  • 1/2 Teaspoon AllSpice
  • 1 Cup Brown Sugar, packed firmly
  • 2 Free Range Eggs, lightly beaten
  • 1 1/2 Cups Milk
  • 3/4 Cup Canola, Sunflower or Vegetable Oil
  • 1 1/2 Cups Over Ripe Bananas, mashed
  • 2 Tablespoons Maple Syrup
  • 2 Tablespoons Honey
  • 2 Tablespoons Golden Syrup
  • 1 Teaspoon Pure Vanilla Essence

Method

  1. Well Grease a Mini-Muffin Pan.
  2. Sift all dry ingredients into a large mixing bowl. Stir in Sugar, then lightly Beaten Eggs, Milk, Oil, Maple & Golden Syrups, Honey, & Vanilla Essence. DON'T OVER-BEAT, the batter is better a little lumpy.
  3. Stir in Mashed Bananas, until just combined.
  4. Using teaspoons, scoop mixture into greased Mini-Muffin Pan/Pans. Fill approx 2/3 the way up the sides of each muffin hole, (for want of a better word!)
  5. Once the tin is ready to pop into the Oven, take a piece of Jersey Caramel, & gently push it down, into each wet muffin, so it is just submerged in the batter.
  6. Place onto a low rack, & cook at 210.C for approx. 14 minutes, or until a skewer removes cleanly- * Note, because of the centre of each muffin containing a liquified caramel, stick the testing skewer in, slightly off-centre, otherwise you'll end up with a skewer sticky with Caramel!
  7. Allow to cool before removing from the pan, & don't worry if some of the bottoms stick a little, because of a little leaking sticky caramel.
  8. Cool on a wire rack.
  9. Serve slightly warmed, by giving them a VERY quick zap in the microwave. This is to obviously ensure the Caramel is lovely & GOOEY!!!

PLEASE ALWAYS USE FREE-RANGE EGGS, IN ANY OF YOUR RECIPES. This Recipe can also be VERY SUCCESSFULLY cooked in a Convection Microwave. If you find you would like to increase or decrease the amount of Jersey Caramel in the centre, please feel free to play around with the recipe, to get your desired level of GOOEY DELECTABILITY!!!
